Building biodiversity for healthy nutritious food.

Our Farm Report - prepared for Feather and Bone Providore in 2020

The Farm

Christoph and Annie embrace the opportunity to produce healthy nutritious food. Whilst Annie’s family has lived and farmed continuously on their block since 1842, neither imagined when they met at Art School in Germany that they would become farmers of free range animals embracing regenerative practices.

Wallendbeen Park is 150 acres of rich fertile soil in the south west slopes of NSW. In addition to the pigs, Christoph runs a herd of cattle and a flock of Wiltipoll sheep in a planned grazing system on land that is free from fertilisers, insecticides and herbicides.

Pastured Pork

Heritage breeds of pigs are raised in a free range, stress-free, outdoor environment in a rotational system. Berkshire cross and Duroc cross piglets are weaned naturally giving the grower pigs the full benefits of their mother’s milk.

Grass Fed Lamb

We breed pure bred Wiltipoll lambs. This is a self shedding, very resilient lamb with a lovely quiet temperament. The flavour and texture of the meat is award winning and very sought after by our customers.

We also run a small herd of cattle each year to assist in the regenerative grazing system. We grow them up to 700kg which makes for an older animal (up to 2 years of age). This greatly enhances the flavour and quality of the meat.
